    1 onion, coarsely chopped

    1 to 2 cloves garlic chopped (optional)

    2 14-oz cans/boxes whole peeled tomatoes

    Coarse salt and freshly ground pepper

    1/2 cup heavy cream or plain Greek yogurt (optional)

    1/2 teaspoon black pepper

    1 cup red bell pepper, chopped

    1/2 cup red onion, minced

    1 tablespoon yellow mustard

    2 tablespoons plain Greek yogurt

    3 cups fresh spinach, washed, wilted, and chopped
